Move over Moinks, These are AMAZING Sausage Bacon Bites!!
A couple of years ago I did a spot for WSIL-TV3 leading up to the Super Bowl featuring quick game day appetizers. I made some moinks. Now, you might be asking yourself, What’s a moink? Well, it’s what you get when you cross a Moo with an Oink!!
Moinks are beef meatballs wrapped in bacon and smoked and grilled until the bacon gets crispy then glazed with, of course, 2 Vets BBQ’s Glaze of Glory sauce!
Well I was looking through the fridge yesterday looking for something for a quick lunch. I noticed that I had a package with 3 strips of bacon left…not good…gotta get more bacon! Right beside the nearly empty bacon pack was a Johnsonville brat pack with 2 brats left…How does this even happen????
What would it be like if I cut the sausages (they were Johnsonville Hot Italian Sausages…Yummo!!)
into bite size pieces and wrapped them in bacon? Hmmmm!

This isn’t rocket science but here’s the recipe!
AMAZING Sausage Bacon Bites!!
Here’s What You’ll Need:
- Sausages. Any type will do.
- 2 Vets BBQ’s Glaze of Glory Sauce
Cut the sausages into bite size pieces. Wrap with bacon. I chose to wrap so the bacon covered the cut parts of the sausage to help hold in some of the moisture…not sure if it matters much.
Give a good dusting with the rub of your choice. Here’s mine:
- ¼ cup granulated garlic
- ¼ cup course ground black pepper
- ½ cup paprika
- ¾ cup kosher salt
- ¾ cup sugar
- ¼ cup finely ground coffee
- cayenne pepper to taste
Put them on the grill. I started them indirectly with smoke from hickory chips then finished them over the coals to crisp them up. Keep an eye on them because they don’t take a long time to cook.
I brushed on some Glaze right before I took them off the grill and again when I got them inside.
AMAZING Sausage Bacon Bites are ingredient light and flavor heavy and you can make a bazillion of them in no time at all!
